Our unique take on the Salted Caramel.
A super-soft centre of sea-salted caramel made using Billington's Dark Muscavado unrefined sugar and Maldon Sea Salt.
This is a ganache (made with chocolate) rather than a caramel (just cream, sugar and butter).
Classically the salted caramel is done using cream and white refined sugar. I have replaced the cream with spring water and use only Billingtons Dark Muscavado unrefined sugar which retains the complex flavours and characters of these caramels.
This oozing marvel is bite size and full of molasses and coffee notes with the richness of the chocolate and contrasting saltiness adding to the effect.
