How to look after your chocolates

We work hard to ensure only the best ingredients are used in our chocolates and we would love you to get the best experience when eating them! To ensure they remain in the best condition you should keep them at a constant temperature between 15-18°C with a humidity of 40-60%, just like red wine. We recommend you leave them at room temperature for 1 hour before eating - the anticipation will add to the enjoyment!

Shelf Life - this is the duration we can guarantee the quality of our chocolates, providing you keep them as we suggest above. However we don't think you'll be able to resist for that long! (note - if chocolate is kept below 10ºc or above 20ºc it will become unstable and the fat or sugar will move causing blooming (white, dull, blemished appearance).

Quality and Shelf life

The shelf life is not a mark of quality, it simply reflects on the amount of water in a product. Our products are of the highest quality. They are all made with great care and professionalism to exacting standards, as you would expect from a professional Pastry Chef of my level. All our products have been sourced and chosen by Damian. He has visited every producer and supplier and has known most for many years.

Each year we review all of our policies and check each of our suppliers are retaining their high standards and hold the documentation to prove it.

Our chocolates are at their optimum the day you receive them and we recommend you consume them within the first week. However, this is not always possible. If they are kept in the conditions recommended above they will be fine for consumption within the stated shelf-life time. By law our products must be tested for the possibility of bacterial growth.

The tests are carried out by an independent laboratory before we put them out for sale, and from this we establish the shelf life. For all the products containing water this has been months, but to err on the side of caution we have established a 2 month shelf life for these products.

For all of the products not containing water, there would be no bacterial activity for more than 1 year, again we have reduced this, to 6 months to ensure quality control. The tests are also carried out monthly to ensure we are consistent in our methods of production.
